Vindaloo Chicken

Vindaloo Chicken is a delicious Goan dish made with meat, garlic and wine. Normally it is made with pork but can be made with other types of meat like chicken lamb etc. In our recipe we have modified to suit Indian taste by making marinade with traditional Indian spices and without using wine.



Recipe Ingredients

* Chicken pieces (boneless) - 1 kg
* Desi Ghee - 2 to 3 tbsp
* Mustard Oil - 4 tbsp
* Onion (chopped) - 1 Big
* Mustard (Rai) Powder - 1 tsp
* Red Chilli Powder - 2 tsp
* Turmeric Powder - 1 tsp
* Ginger Garlic Paste - 1 tbsp
* Cumin Powder - 2 tsp
* Cloves - 5
* Vinegar - 2 tbsp
* Brown Sugar - 1 tbsp
* Salt to taste

Preparation

We will first make a marinade by combining or blending onion(Half quantity only), sugar, turmeric powder, ginger garlic paste, red chilli powder, cumin powder, vinegar, mustard oil, mustard powder and salt in a food processor. Blend till a smooth paste is formed.

Take chicken pieces, clean it and make cuts on the pieces. This will help in marinate seeping deeper into chicken.

Now apply above ready paste on all sides of chicken pieces and let it marinate for atleast 4 hours.

After 4 hours remove marinate from the surface of chicken pieces and keep it aside. Take a pan and heat ghee in it. Once it is hot add chicken pieces and sauté the pieces on medium flame for 5 minutes. During this time chicken pieces will turn little brown. Take them off the flame and keep aside.

In the same pan sauté onions till little brown then add marinate mixture and cook for 2 to 3 minutes on medium to low flame. Then add chicken pieces with water(as per your requirement), cover the pan with a lid and cook till chicken pieces are tender and done.

Enjoy with Tandoori Rotis and Rice.
