Vegetable Khichdi

Vegetable Khichdi - The most common and easy rice dish of Indian Cuisine. Khichdi is very popular due to its easy digestible properties also. You can serve it to a sick person, to a healthy man or even as part of the main course. This dish goes with everything. We make it little spicy with use of traditional Indian spices.



Recipe Ingredients

* Basmati Rice - 1 cup
* Green Gram Dal (split) - 1 cup
* Desi Ghee (clarified butter) - 1/2 cup
* Onion (chopped) - 1
* Cinnamon stick (1") - 1
* Bay Leaves - 2
* Cloves - 4
* Turmeric Powder - 1 tsp
* Red Chilli Powder - 1 tsp
* Garam Masala - 1 tsp
* Green Chillies (chopped) - 2
* Peppercorns - 4
* Coriander leaves - hand full
* Ginger Garlic Paste - 2 tsp
* Salt to taste


Preparation

First wash, soak rice in water for 10 minutes. Drain and keep aside. Similarly wash and clean green gram dal in water and keep aside.

Take a heavy bottomed pan and fry onions in desi ghee (1 tbsp). When the onions turn little brown, add ginger garlic paste and green chillies. Then add garam masala and fry for a while, put rice and dal and fry both till they turn crisp and aromatic.

Pour in warm water till it is about 2 inches above the level of the rice. Add remaining spices and salt also. If the water dries up, add more. As the water starts boiling, lower the heat and simmer till rice is done.

Sprinkle desi ghee and coriander leaves before serving. Serve hot with Yoghurt and Papad.
