Vegetable Jalfrezi is a curry made with a combination of onion, tomato, capsicum and green chillies. The dish is enjoyed most with tandoori rotis.
Jalfrezi Recipe Ingredients
* Oil - For frying
* Cauliflower - One medium size
* French Beans - 10 to 12
* Capsicum - 2
* Carrot - 2
* Green Peas - 1/2 cup
* Almond/Cashews grated - 10 pieces each
* Onion (chopped) - 2
* Tomatoes (chopped)- 2
* Ginger Garlic Paste - 1 tbsp
* Green Chillies (cut) - 2
* Cumin Seeds - 1/2 tsp
* Garam Masala - 1 tsp
* Red Chilli Powder - 1 tsp
* Turmeric Powder - 1 tsp
* Coriander Powder - 1 tsp
* Salt to taste
Take all vegetables and cut to pieces.
In a medium size pan put oil and heat it. Once oil is hot add cumin seeds. As soon as seeds starts sputtering add onion. Fry till onions turn little brown.
Then add tomatoes, ginger garlic paste, red chilli powder, coriander powder, almond cashew paste and stir frequently. Keep moving the items till mixture becomes little dry.
Put all the vegetables in the above mixture and add 1 cup water. On medium flame keep cooking till vegetables are soft. Add remaining spices, salt and green chillies and cook for few more minutes.
Serve hot after garnishing with coriander leaves.
