Vattayappam

Vattayappam - A delicious Kerala Dessert made with rice flour and coconut milk. You can make it ready in batter form for continuous use for 2 to 3 days.



Recipe Ingredients

* Rice Flour (roasted) - 2 cups

* Coconut (grated) - 1 1/2 cup

* Desi Ghee (Clarified Butter) - 1 tbsp

* Cumin Seeds - 1/2 tsp

* Dry Yeast - 1 tsp

* Sugar - 4 tsp

* Water - 1 cup

* Salt to taste


Preparation

First mix yeast and sugar and add lukewarm water (1/4 cup). Mix properly and keep aside for 3 to 4 hours to ferment. Once the froth appears on the surface it means the mixture has fermented.

Take a bowl and mix rice flour and yeast ferment and make a soft dough. Ensure that dough is soft. Grind coconut, cumin seeds and sugar and add it with water (1 cup) to make a stiff batter. Keep it overnight.

Next day add salt and mix well. Take a pan and grease desi ghee on to the surface after putting on the gas. Pour the batter in to it up to the half the height of the pan. Keep it in Idli steamer and cook for 20 minutes. Once cooked take out from the steamer and cut into pieces and serve.
