Vadakari

Vadakari - South Indian Gravy made with Toor Dal and Chana Dal. It is very rich in taste and can be enjoyed with any South Indian dish like Dosa, Idli etc.



Recipe Ingredients

* Toor Dal - 1/2 cup
* Chana Dal - 1/2 cup
* Aniseeds - 1/2 tsp
* Refined Oil - As required
* Garlic - 3 flakes
* Green Chillies - 3
* Red Chillies - 3
* Onion (chopped) - 1 cup
* Tomato (chopped) - 1/2 cup
* Chilli Powder - 1 tsp
* Coriander Powder - 1 tsp
* Jeera Powder - 1 tsp
* Turmeric Powder - 1 tsp
* Salt to taste

For Seasoning

* Mustard Seeds - 1 tsp
* Cloves - 2
* Cinnamon - 1 small piece
* Aniseed - 1/2 tsp
* Cardamom - 2
* Bay Leaves - A few
* Curry Leaves - A few


Preparation

First soak toor dal and chana dal for 24 hours.

After a day drain out the excess water and grind with garlic, ani seeds, red chillies, green chillies and required salt to a coarse paste without adding water.

Spread on idli plates and steam cook in the idli cooker for 20 minutes. When done, cool the paste to room temperature and break into small pieces. Keep aside.

In a kadai(wok), add 4 tsp of oil and fry the seasonings. Add and fry onion and then tomato. Add all the four spice powders and required salt and fry. Then add half cup of water and boil till the raw flavour is removed.

Mix the cooked dal paste and sauté together for a few minutes. This goes well with Idli, Dosa and even Poori.
