Uttapam Recipe - Uttapam is a thick Dosa with chopped onions on top. It is mostly enjoyed during breakfast or dinner time. Easy method is to make the batter and keep it in your refrigerator to use later.
Recipe Ingredients
* Parboiled Rice - 2 cups * Urad Dal (whole) - 1/2 cup
* Toor Dal - 1 tbsp * Onion (chopped) - 2
* Cooking Oil - As per Requirement * Ginger 1" piece - 1 (grated)
* Fenugreek Seeds - 2 tsp * Coriander Leaves - a few
* Salt to taste
Preparation
First soak rice, dals and fenugreek seeds together for 4 hours and then grind well to make a soft batter. Mix in required salt and leave it to ferment for a minimum 20 hours.
As and when required, prepare thick dosas on a dosa tawa. Pour 1 tsp oil around dosa. Cover with a lid and open it after 30 seconds. Sprinkle finely chopped onion, green chillies, garlic, ginger, coriander leaves on top of the uttapam.
Turn over to the other side carefully. Cook on a medium flame till both the sides are done.
