Undhiyo - Made with Muthiya and raw vegetables is a traditional Gujarati Dish. Preparation takes a little longer but is good to make it once in a while.

Recipe Ingredients

* Small Brinjals - 200g (3 to 4)
* Potatoes small (peeled) - 250g
* White Pumpkin peeled (kaddu) - 250g
* Beans - 50g
* Kand (yam) - 200g
* Ginger Garlic Paste - 2 tbsp
* Cooking Oil - 6 to 7 tbsp
* Coconut (Grated) - 2 tbsp
* Cumin Seeds - 1/2 tsp
* Mustard Seeds - 1/2 tsp
* Fennel Seeds - 1 tsp
* Turmeric Powder - 1 tsp
* Coriander Powder - 1 tsp
* Green Chillies (cut) - 3
* Asafoetida - a pinch
* Coriander Leaves - hand full
* Garam Masala - 1/2 tsp
* Salt to taste
* Sugar - 1 tsp
* Water - 2 cups

Muthiya Ingredients

* Gram Flour - 1/2 cup
* Fenugreek Leaves - 1/2 cup
* Cooking Oil - For Frying
* Ginger Garlic Paste - 1 tbsp
* Green Chillies (chopped) - 2
* Coriander Leaves (chopped) - hand full
* Salt to taste

Muthiya Preparation

First clean and finely chop Fenugreek Leaves. If you clean them with water let them dry of excess water.

Take a medium size bowl and mix gram flour, fenugreek leaves, green chillies and cooking oil(1tbsp) in it. Knead to form a semi hard dough. Keep it aside.

Divide the dough into 1/2 inch dough balls. Steam these balls in a cooker for 10 minutes.

In a Kadai heat cooking oil. Deep fry these dough balls till golden brown and keep them aside.

Undhiyo Recipe

Cut brinjals and potatoes to medium size pieces. Dice off Yam(kand) and cut beans to one inch pieces.

Take a medium size Kadai(wok) and heat oil in it. Once it is hot add mustard seeds, cumin seeds and asafoetida. As seeds starts spluttering add garam masala. Mix well.

Put beans, pumpkin and other vegetables in the kadai. Add turmeric powder, salt and stir fry for 5 minutes. Pour water, cover with a lid and let it simmer for 15 minutes on slow flame.

After 15 minutes add ready Muthiya and put other ingredients (without coconut powder and coriander leaves) also in it. Cook for 10 to 15 minutes more. Take care to stir in between.

Serve hot after garnishing with coconut powder and coriander leaves.
