Ulli Theeyal

Ulli Theeyal - This is a traditional Kerala sauce which is semi-sweet and spicy and mostly served along with rice.



Recipe Ingredients

* Onions (cut) - 3

* Jaggery - 1 tsp

* Tamarind - A small Piece

* Green Chillies (split) - 3

* Grated Coconut - 1 cup

* Red Chilli Powder - 2 tsp

* Coriander Powder - 1 tsp

* Turmeric Powder - 1/2 tsp

* Curry Leaves - 5 to 6

* Coconut Oil - 2 tbsp

* Salt to taste

* Water - 1/2 cup


Preparation

Take a pan and heat oil in it. Once it is hot fry onions and green chillies.

Now fry the grated a light brown over low flame, add the spice powders and cook a couple of minutes. Remove, dry grind to a fine coffee brown powder.

Meanwhile soak the tamarind in the water to make tamarind water. The moist piece when rubbed with fingers, in the water will quickly dissolve.

Stir the sugar and a little salt into the tamarind water. Stir in the ground paste and the curry leaves.

Return to the fire and cook uncovered till the oil separates and float on top of the gravy.

Add few split cashews as garnish before serving.
