Ukadiche Modak

Ukadiche Modak - A Maharashtrian sweet made during Ganpati festival. It is also offered as prasad to Ganpati.



Recipe Ingredients

* Rice Flour - 1 cup

* Desi Ghee (clarified butter) - 1 tbsp

* Refined Oil - 1 tsp

* Coconut, grated - 1 1/2 cup

* Jaggery (Gur), grated - 3/4 cup

* Cardamom Powder - 1/2 tsp

* Salt - A Pinch

* Water - 1/2 cup


Preparation

Take a kadai(wok) and add water, salt and desi ghee in it. Bring it to a boil and as it start boiling add rice flour slowly. Keep stirring and put the gas on slow to medium flame. Stir continuously to avoid lump formation. Remove the kadai from the flame and keep it aside covered with a lid to keep it warm for 15 minutes.

Once the rice dough has cooled down a bit. Grease your palm with oil and knead the cooked rice mixture to a soft dough. Cover it with a moist cloth.

Now make the filling by melting jaggery in a pan (on medium flame) and mixing coconut powder and cardamom powder. Cook for 2 minutes and remove the pan from flame. ensure the filling is not overcooked.

Make equal size balls of 2 inch diameter. Then roll each of them into a round shape of 4 inch diameter. Press the edges further to reduce the thickness.

Make various folds in each dough ball with 1 cm distance between two folds. To make a fold, pinch the outer line of rolled dough a little bit ahead, making a 2 mm thick fold.

Add a spoonful of filling in the dough. Seal and bring the fold to a close by pressing with your fingers. Ensure sealing is perfect with no gap.

Steam each Modak in an idli steamer for 10 minutes or until they turn translucent. Serve hot after garnishing with desi ghee.
