Tomato Kasundi

Tomato Kasundi - Tingy and Tangy Gujarati Tomato Sauce for smacking along with Dhokla, Samosas etc.



Recipe Ingredients

* Tomatoes - 5 to 6

* Cooking Oil - 1 to 2 tbsp

* Ginger Paste - 1 tsp

* Mustard Seeds - 1/2 tsp

* Vinegar - 2 tsp

* Turmeric Powder - 1/2 tsp

* Red Chilli Powder - 1/2 tsp

* Salt to taste

Preparation

First wash, clean and chop tomatoes. Keep them aside.

Take a medium size pan and heat oil in it. Once it is hot add mustard seeds. As seeds starts spluttering add garlic paste and cook on medium heat till it turns little brown.

Add chopped tomatoes and all other ingredients(except vinegar). Mix well and stir fry for 3 to 4 minutes continuosly on medium flame.

Add vinegar and bring to a boil. With gas on low flame cover the pan with a lid and let the dish simmer till a thick paste is formed. This will take 10 to 15 minutes.

Take off from the gas, let the sauce cool down and then fill it in glass jars.
