Thengai Sadam - South Indian Recipe of Coconut Rice. You can make it in 10 minutes and can enjoy with Papad and curry (kuzhambu).
* Basmati Rice - 1 cup
* Grated Coconut - 1/2 cup
* Refined Oil - 2 tsp
* Red Chillies - 2
* Green Chillies - 2
* Mustard Seeds - 1/2 tsp
* Asafoetida (hing) - A Pinch
* Urad Dal (Split Black Gram) - 2 tsp
* Cashew Nuts - 1 tsp
* Curry Leaves - A few
* Salt to taste
First wash the rice in clean water and cook in pressure cooker till two whistles and keep aside to let it cool down.
Take a kadai (wok) and heat oil in it. Once it is hot add mustard seeds, dry red chillies , hing and urad dal. As seeds start spluttering, add coconut and sauté till golden brown. Add the salt and then mix with the rice.
Taste to adjust the salt and serve along with fried poppadum and Kuzhambu.
