Tamarind Rice

Tamarind Rice - A simple and fast to rice dish to make. In this recipe we will first make tamarind sauce using Indian spices and then will mix it with cooked rice to make the final dish.



Recipe Ingredients

* Basmati Rice - 1 cup

* Tamarind (lemon size) - 1

* Gingelly Oil - 2 tbsp

* Fenugreek Seeds - 1/2 tsp

* Sesame Seeds - 1 tsp

* Curry Leaves - A few

* Turmeric Powder - 1/2 tsp

* Asafoetida - A pinch

* Mustard Seeds - 1 tsp

* Chana dal - 1 tsp

* Red Chillies - 5

* Salt to taste

Preparation

First wash and soak the rice for 10 minutes. Drain and keep aside. Then cook the rice with 2 cups of water. Each grain should be separate. Keep aside.

Extract tamarind juice with 2 cups of water. Take a heavy bottomed pan and heat oil in it. Once the oil is hot, add mustard seeds. As seeds start spluttering add chana dal, red chillies, asafoetida, turmeric powder and curry leaves. Add tamarind extract and required salt. Boil for 15 minutes till it thickens. Mix it well, turn off the gas and your tamarind sauce is ready.

Store this in a airtight container and this tamarind sauce can be used up to 10 days. Prepare the rice and tamarind dish by mixing cooked rice with this sauce as and when required. Serve along with Papad.
