Taftan

Taftan- A rich thick fluffy rice flour bread very common in southern part of India. Make it yourself with this easy recipe.



Recipe Ingredients

* Rice Flour - 2 cups

* Milk - 1 cup

* Desi Ghee (clarified Butter) - 6 tbsp

* Coriander Leaves (chopped) - 1/4 cup

* Yeast - 1/2 tsp

* Magaz (Melon Seeds) - 1 tsp

* Sugar - 1/2 tsp

* Salt to taste

* Water

Preparation

First sieve rice flour and salt together.

In a plate put this flour and make a well in the flour. Add milk, ghee, yeast, melon seeds, sugar and sufficient water to make a soft dough. Knead properly and ensure too much water is not used.

Divide the dough into 4 to 5 equal size balls and keep it aside for 30 minutes. Smear little rice flour on top surface of dough balls and roll into 4 inch discs each. These will be little thick and then sprinkle with chopped coriander.

Bake in Tandoor or preheated oven till brown. Apply little ghee on top and serve hot along with coconut chutney.
