Sukavni

Sukavni - A Gujarati Snack made in buttermilk and dried for tea time use.



Recipe Ingredients

* Gawar Ki Fali (Cluster Beans) - 200g
* String Beans - 200g
* Cooking Oil - for frying
* Yogurt - 1 cup
* Cumin Powder - 1/2 tsp
* Asafoetida - a pinch
* Red Chilli Powder - 1/2 tsp
* Coriander Powder - 1/2 tsp
* Green Chillies (cut) - 10
* Salt to Taste


Preparation

First clean and cut Gawar Ki Fali and String Beans. Keep them aside.

Make buttermilk by blending yogurt with water (1 or 2 cups) in a Jug. Soak both the beans and green chillies in buttermilk. Keep this preparation aside for 2 days to ferment.

After 2 days remove beans and green chillies from the buttermilk and dry them in the sun. Once dry store them in a plastic jar. At the time of serving deep fry these beans and green chillies till they turn crisp.

Remove from the frying and sprinkle with red chilli powder, cumin powder, asafoetida, coriander powder. Serve hot along with Tea.
