Stuffed Potatoes - Eat these potatoes stuffed with yummy Paneer and mushrooms. If you are non-vegetarian you can make stuffing with minced chicken or beef meat also.
First boil potatoes in a pressure cooker until two whistles. Do not over cook. Keeping the skin on cut them into two halves lengthwise.
Using a potato scooper, scoop out potato part from the center leaving thick walls of potatoes. This hollow portion will be used for stuffing. Keep them aside.
Take a kadai(wok) and heat melt butter in it. As the butter has melted add onion and ginger garlic paste. Sauté till onions turn little brownish. Add corn flour. Sauté for a minute more and then add mushrooms. Stir for half a minute and add milk. Stir frequently and add half quantity of mashed paneer(50g). Stir continuously on medium flame add salt, red chilli powder, green chillies. Make this batter with a little thick consistency.
Put a spoonful of batter in each scooped potato and garnish with remaining mashed paneer. Preheat the oven to 200deg C and bake these potatoes for 10 to 15 minutes. Take out form the oven and serve along with Chilli sauce.
