Semiya Payasam

Semiya Payasam - South Indian sweet dish made of vermicelli in sweetened milk. Very easy to make dessert and is more tasty when served chilled.



Recipe Ingredients

* Vermicelli (Sev) - 1/2 cup

* Desi Ghee - 4 tsp

* Milk - 5 cups

* Sugar - 100g

* Green Cardamom (crushed) - 3

* Cashew Nuts - 7 to 8

* Raisins - 7 to 8

* Saffron - Few strands

Preparation

Heat 2 tsp of desi ghee in a pan and stir fry the vermicelli till it turns slightly brown.

Then boil the fried vermicelli in the milk till it is cooked. Add sugar and boil for 5 to 10 minutes more stirring constantly.

Mix in the crushed green cardamom. Heat the remaining ghee in the pan and fry the cashew nuts till they turns golden. Remove and add to the milk mixture. You can dissolve a pinch of saffron in a spoon of cold milk and add it to the payasam before removing the pan from the heat.
