First clean and cut the chicken to 5 pieces. Then apply the pieces with half quantity of ginger garlic paste and salt and keep aside.
Take a saucepan and heat oil in it. Once it is hot add fenugreek and mustard seeds. As they start sputtering add remaining ginger garlic paste, red chilli powder, cumin powder, coriander powder, salt, garam masala and mustard powder.
In a mixer or food processor, make a fine paste of coriander leaves, green chillies, mint leaves. Add one or two tablespoon of water as desired. Add this paste to the pan.
Now add marinated chicken pieces to the gravy and cook till the oil separates. Add half cup of water and cook on medium flame till it is done.
Take the pan off the flame and garnish the dish with cut pieces of Tomatoes.
