Sambhariya Kaddu is a easy Gujarati Sabji which can be cooked in 15 to 20 minutes. Below is a Gujarati style recipe, but you can cook it as per your taste by using onions, garlic or other Indian spices.
First wash the pumpkin, clean off the outer skin and cut it into 1/2 inch cube size pieces.
Taka a kadai(wok) and heat desi ghee in it. Once it is hot add cumin seeds, coriander seeds, fenugreek seeds, bay leaf, asafoetida and sauté a little so that these ingredients are mixed properly.
Add ginger paste and kaddu pieces in the kadai and stir fry for 2 to 3 minutes on medium flame. Add turmeric powder, red chilli powder, dry red chillies, salt and stir fry for few minutes.
Sprinkle garam masala, cover the wok with a lid and cook till kaddu is half done. Add tamarind and sugar. Mix all the ingredients well and again cook covered on a low flame till fully done.
If your pumpkin is fully ripe(red in colour) avoid sugar and cook with other ingredients only.
Garnish with coriander leaves and enjoy it with a Paratha.
