Sambhariya Bhindi

Bhindi Bhaji in Gujarat style cooking - Sambhariya Bhindi is cooked after stuffing with spices. Frying in yogurt brings it a distinct flavour. Make yourself this dish in 10 to 15 minutes.



Recipe Ingredients

* Bhindi (Okra or Ladies finger) - 250g
* Cooking Oil - for frying

* Yogurt - 3 tbsp
* Ginger Paste - 1/2 tsp

* Cumin Powder - 1/2 tsp
* Red Chilli Powder - 1/2 tsp

* Coriander Powder - 1/2 tsp
* Green Chilli Paste - 1/2 tsp

* Coconut (grated) - 2 tbsp
* Coriander Leaves - hand full

* Salt to taste

Preparation

Slit bhindi lengthwise and keep them aside.

In a bowl mix green chilli paste, coconut powder, cumin powder, coriander powder, red chilli powder, ginger paste and green coriander. This will form the filling for bhindi.

Ensure mixing is proper and stuff each bhindi with this mixture. Take a Kadai(wok) and heat oil in it. Once it is hot lower the flame to medium and gently put all the stuffed bhindi in it. Deep fry them till they turn soft. Remove from the wok and drain out the excess oil on absorbent kitchen towels.

In a separate pan, add yogurt and fried okra, cook on a low flame for 5 minutes. Add salt and mix well. Cook for 1 or 2 minutes more and take off from flame.

Serve hot after garnishing with coriander leaves.
