Sambar Recipe

Sambar Recipe - South Indian Cuisine is incomplete without Sambar and Rasam. Now a days Sambar Powder is easily available in market. Use it to bring natural flavour to the Sambhar.



Recipe Ingredients

* Vegetables (Drumsticks, aubergines, potatoes), chopped - 2 cup
* Refined Oil - 1 tsp
* Tamarind (lemon size) - 1
* Curry leaves - 5
* Sambar Powder - 1 1/2 tsp

Sambhar

* Arhar Dal (Split Red Gram),cooked - 1/2cup
* Rice Powder - 1 tsp
* Dry Red Chillies - 2
* Mustard Seeds - 1/4 tsp
* Fenugreek Seeds - 1/4 tsp
* Asafoetida (hing) - A Pinch
* Salt to taste

Preparation

Take a cup and soak the tamarind for 5 to 10 minutes and squeeze out the juice.

Cook the vegetables with the tamarind juice. Add hing, curry leaves and enough water to cover the vegetables.

Add sambar powder and salt and mix well. When the vegetables are tender add the cooked arhar dal and let it come to the boil. If the mixture looks a little thin, add rice powder dissolved in a few spoons of water and boil for a minute. Remove from the flame.

Take a kadai(wok) and heat oil in it. Once it is hot add dry red chillies, mustard seeds and fenugreek seeds. Sauté till the seeds start spluttering. Remove and add to the sambar.

Enjoy with Rice.
