Sali Boti

Sali Boti - Parsi Recipe of Mutton. It is served along with potato straws to give a distinct flavour.



Recipe Ingredients

* Mutton (cut to cube size pieces) - 1kg
* Cooking Oil - To fry
* Desi Ghee - 2 tbsp
* Onions (chopped) - 3
* Tomatoes (chopped) - 3
* Potatoes (peeled & cut to thin straws) - 5
* Turmeric Powder - 1/2 tsp
* Red Chilli Powder - 1/2 tsp
* Green Chillies (chopped) - 3
* Jaggery - 1 tbsp
* Vinegar - 1 tbsp
* Ginger Garlic Paste - 1 tsp
* Coriander Leaves (chopped) - For garnishing
* Salt to taste
* Water - 2 cup

Preparation

Take a kadai(wok) and heat oil in it. Once it is hot, sauté onions until golden in colour. Now add, ginger garlic paste, red chilli powder and turmeric powder. Mix well and stir for 3 to 4 minutes.

Add mutton cubes and cook till the meat gets a light brown colour. Now add water, green chillies, salt, tomatoes and bring to a boil. Cook for half an hour and add jaggery and vinegar with it. Mix well and cook for 5 minutes more.

Remove the kadai from the gas and garnish with coriander leaves. Your Boti is ready now. For Sali, soak fine potato straws in chilled salty water for 5 minutes. Drain out the water and dry the straws in the room under a fan. Deep fry the straws in desi ghee or cooking oil until golden brown. Put the fried straws on a paper towel to let excess oil is absorbed.

Serve hot with ready Boti.
