Saag Aloo

Saag Aloo - This Sag recipe is made with Palak(Spinach) and dish is very richer in taste due to the use of cashew nuts and khus-khus.



Recipe Ingredients

* Aloo (Potatoes) - 4
* Spinach bunches (chopped) - 3
* Coriander Leaves (finely chopped) - hand full
* Desi Ghee (Clarified Butter) - 3 tbsp
* Red Chilli Powder - 1/2 tsp
* Coconut (grated) - 3 tbsp
* Cashew nuts - 10
* Khus-Khus - 1 tbsp
* Onions (finely chopped) - 2
* Green Chillies (chopped) - 2
* Cumin Seeds - 1 tsp
* Sugar - A pinch
* Water - 1/2 cup
* Salt to taste

Preparation

First boil the potatoes in a pressure cooker till three whistles. Let them cool down a bit and then peel off the skin. Cut them into medium size pieces and keep aside.

Now pressure cook the spinach. Remove and cool. In a mixer, blend

the spinach with coriander leaves to a fine paste. Set aside.

Grind the coconut, khus-khus and green chillies together to make a fine paste. Set aside.

Heat Desi ghee(1 tbsp) in a pan. Once it is hot add cumin seeds. As seeds start crackling add cashew nuts and chopped onions. Fry till golden brown. Remove from the pan and set aside in a separate bowl. In the remaining ghee, fry the spinach paste for 4 to 5 minutes. Remove from the flame.

In a separate medium size pan fry coconut mix till light brown. Add salt, sugar, red chilli powder, potato pieces and spinach paste and fried onions. Add water and mix well. Bring to a boil.

Remove and garnish with cream if required and serve hot along with Rotis.
