Rogan Josh

One of the most sought after Non-Veg Punjabi dish is Rogan Josh. The Rogan Recipe is made from meat of Lamb, Mutton or Chicken. Lamb Josh or any meat josh has thick aroma and flavour with good use of spices. First step in preparation is to make curry josh and then flavour the meat with it.



Recipe Ingredients

* Fresh Meat, Mutton or Lamb or Chicken - 1/2 kg
* Onion (Chopped)- 2 big
* Tomatoes (chopped)- 2 big
* Cumin Seeds - 1/2 tsp
* Coriander seeds - 1/2 tsp
* Red Chillies - 2
* Ghee - 1/2 cup
* Yogurt - 100ml
* Cloves - 4
* Ginger Garlic Paste - 2 tbsp
* Coriander Powder - 1/2 tsp
* Cumin Powder - 1/2 tsp
* Red Chilli Powder - 1 tsp
* Cardamom (small)- 4
* Cardamom (big) - 4
* Turmeric Powder - 1/4 tsp
* Salt to taste



Preparation

In a pan, heat cumin seeds, coriander seeds, cloves, cardamoms, red chillies, turmeric powder and pinch of salt. Grind these to powder and add ginger garlic paste and mix properly.

Take ghee in a separate pan and put onions into it. Fry till it turns brown and ghee separates. Add Ginger garlic and spices mixture to it and also add all other ingredients (yogurt,coriander/cumin powder, tomatoes, cardamom big). Cook this on medium flame for 15 minutes to make the spice mixture.

Add mutton or meat or chicken pieces to this spices mixture and cook on slow to medium flame till meat is cooked properly and turned brown. Add little water and salt also if required. Once cooked garnish with coriander.
