Red Lentil Soup

Red Lentil Soup - Easy Indian Soup made with Masoor Dal (Red Lentils) and Carrot.



Recipe Ingredients

* Red Lentils (Masoor Dal) - 1 cup
* Carrot (finely chopped) - 1
* Oil - 1 tbsp
* Onion (chopped) - 1
* Celery (chopped) - 2 tbsp
* Tomato (chopped) - 1
* Garlic Cloves (minced) - 2
* Ginger (minced) - 1/4 tsp
* Dhania Powder(Coriander) - 1 tbsp
* Cumin Powder - 1 tsp
* Salt and Pepper to taste

For Garnish

* Fried Onions - 4 tbsp
* Coriander Leaves (chopped) - 4 tbsp
* Mint Leaves (chopped) - 2 tsp
* Lime Juice - 4 tbsp

Preparation

First wash the lentils well and soak in water for 1/2 hour. Chop onion, carrot and celery. The mix of these three together is a base for almost all kinds of soups.

Take a medium size pan and heat oil in it. Once it is hot add above cooked mixture and saute on medium heat till the vegetables are soft. Do not brown the onions as the taste changes. Add ginger and garlic and saute for 30 seconds. Add chopped tomato. Add drained lentils, spices and about 5/6 cups of water. Cook till done. Add salt and pepper to taste.

To garnish, mix 1 tbsp fried onion, 1 tbsp chopped coriander, 1/2 tsp mint and 1 tbsp lime juice. Sprinkle over soup and serve immediately.
