Rava Recipe - Parsi dish of suji (semolina) made with dried fruits.
* Suji (semolina) - 250g
* Desi Ghee - 1 cup
* Eggs (beaten) - 4
* Milk Full Cream (cold) - 5 cups
* Almonds (blanched) - 1 cup
* Raisins - 2 cups
* Green Cardamoms (powdered) - 6
* Nutmeg (jaiphal) powder - 1/4 tsp
* Rose Water 2 tsp
Take a kadai(wok) and heat desi ghee(1/2 cup) in it. Once it is hot, fry the almonds and raisins. Remove and drain the excess oil on absorbent paper towels.
In the same desi ghee, add suji, sauté on low heat till a pleasant aroma emanates. Then remove and mix in 1/2 cup water. Return to heat and cook for 2 to 3 minutes.
Remove from heat and add the sugar. Mix the eggs and milk together. Add this to the suji mixture. Return to heat, cook on a low flame, stirring continuously, to avoid formation of lumps. Add desi ghee, bit by bit, till the mixture thickens. Mix in the green cardamom powder, nutmeg powder and rose water.
Serve warm in a bowl after garnishing with almonds, raisins and a dash of rose water.
