Rava Dosai

Rava Dosai - Dosa made with Rava (Semolina). Easy and fast to make within half an hour.

Recipe Ingredients

* Rava (Semolina) - 1 1/2 cup
* Refined Oil - For Frying
* Rice Flour - 2 cups
* Maida (Refined Flour) - 1 tbsp
* Yogurt - 1/4 cup
* Curry Leaves - 4
* Mustard Seeds - 1/4 tsp
* Ginger, 1 inch - 1
* Green Chillies (chopped) - 2
* Cumin Seeds - 1/2 tsp
* Asafoetida (hing) - A Pinch
* Pepper Corn - 1/2 tsp
* Salt to taste

Preparation

First soak rava, rice flour and maida together with salt in water for 2 to 3 hours.

After 2 hours drain out the excess water and add yogurt, hing, curry leaves and salt. Add water to make a thin batter.

Take a kadai(wok) and heat oil in it. Once it is hot add mustard seeds, cumin seeds and green chillies. As seeds start sputtering remove and pour into the batter. Mix in the ginger.

Heat a griddle (tawa) and smear it with oil. Pour the batter from the outer edge to the centre with a cup and tilt the tawa from side to side so that the batter spreads evenly. When the edges turn up and are crisp and brown, toss it over and cook the other side also. Cook on medium flame on both the sides till dosa is crisp and golden brown.

Serve with Sambhar and Coconut Chutney.
