Rajbhog is a delicious cottage cheese dessert mostly found in North India. You can call it cheese dumplings also while another name for it is chena murgi.

Recipe Ingredients
* Full Cream Milk - 2 litres
* Sugar - 1.5 kg
* Cardamom Powder - 1 tsp
* Lemon Juice - 3 tbsp
* Rose Water - 1/2 tsp
* Pistas (cut to pieces) - 30g
* Water - 1.5 litres
Preparation
Take 2 cups of milk and boil it along with sugar (2 tbsp) till it reduces to half its quantity. Add pistas and cardamom powder and cook till mixture leaves the sides of the pan. Keep it aside. This will make the filling.
In a separate pan boil the remaining milk. Once it starts boiling add lemon juice to curdle the milk. Take off the pan from the fire. Take a moist cheesecloth and spread it on top of a empty pan. Pour cheese whey mixture into cheesecloth. Pick up the cloth from corners and twist it slightly to trap the cheese inside. Hang the cloth for half hour to allow excess water to ooze out.
Remove the cottage cheese from the cloth and put on clean surface and crumble it. Divide into 10 portions and flatten each slowly. Also divide the filling into 10 portions and place one in the centre of each flat cheese. Roll into balls.
Make sugar syrup by boiling remaining sugar and water till the sugar is dissolved completely. Gently put each ball and boil for 15 minutes more.
Remove from the flame and let the dumplings cool. Sprinkle with Rose water and serve chilled.
