Rabdi Recipe - A Rajasthani drink made with (Bajra) Millet flour and yogurt. Its refreshing and good thing to have during summers.
Recipe Ingredients
* Bajra (Millet Flour) - 4 tbsp
* Yogurt - 250g
* Butter - 7 tsp
* Cumin Seeds (powdered & roasted) - 1 tsp
* Green Coriander (chopped) - 1 tbsp
* Ginger Garlic Paste - 4 tsp
* Salt to taste
* Water - 15 cups
Preparation
Mix together the yogurt and the flour in a bowl and keep it aside.
Take a pot and heat butter in it. Once it has melted add ginger garlic paste and sauté over the medium heat for 2 to 3 minutes or until brown in colour.
Stir in the flour yogurt mixture and bring to a boil. Add water and let it simmer, till it is reduced to two third the original quantity.
Add salt and mix well. Remove from the fire and cool to room temperature. Pass the mixture through a muslin cloth. Serve chilled, garnished with cumin seed powder and green coriander.
