Puttu Recipe

Puttu Recipe - South Indian dish of steamed rice flour. It is sweet in taste due to use of Jaggery.



Recipe Ingredients

* Processed Rice Flour - 3 cups

* Powdered Jaggery - 2 cups

* Coconut grated - 3 tbsp

* Desi Ghee (Clarified Butter) - 1 tbsp

* Cardamom Powder - A Pinch

* Cashew Nuts roasted - 1 tbsp



Preparation

Dry roast rice flour to a light pinkish colour. After cooling, sprinkle warm water and mix the flour carefully to a semi-wet consistency.

Lay a thin muslin cloth on an Idli plate and spread the wet flour evenly on it. Cover it with another thin cloth and then steam cook in an Idli cooker.

When steamed well, transfer to a dry tray and allow to cool. Prepare a jaggery syrup of three string consistency. Add desi ghee and slowly mix the steamed flour into the syrup, stirring constantly. Turn off the flame then add roasted cashew nuts, grated coconut and cardamom powder and mix well.

Serve after puttu is cooled to room temperature.
