Puran Poli

A very popular Marathi Dish, Puran Poli is mostly prepared during Ganesh Chaturthi, Gudi Padwa and Diwali time. This dish is also known as Holige in Karnataka.



Recipe Ingredients

* Chana Dal (Bengal Gram) - 1 cup

* Refined Flour (Maida) - 1 cup

* Cardamom Powder - 1 tsp

* Desi Ghee (clarified Butter) - 3 tbsp

* Jaggery - 1 cup or as per choice

* Turmeric Powder - 1/2 tsp

* Salt - A Pinch


Preparation

Take refined flour, mix salt & turmeric powder in it and knead the flour into a soft dough with little water. Make 5 to 6 balls from the dough. Keep aside.

In a pan roast chana dal till golden in colour. Then grind finely and pressure cook with little water till soft.

In a separate pan , gently saute the cooked chana dal till thick. Add jaggery and cardamom powder. Keep it aside to cool and divide into 5 or 6 portions.

Take each dough ball and roll out on a flat surface to make small round pancake. Put one portion of chana dal mixture in the centre and fold the pancake from all sides to cover the mixture and shaping into a flattened ball.

Take each packed dough and roll into rounds. Apply flour to make it non-sticky. Then roast on a girdle from both sides. Apply ghee and serve hot.
