Pumpkin Curry is an easy curry dish, which can be made ready in 25 to 30 minutes with minimum effort. Most of the pumpkin recipes are dry but this dish is rich with curry and taste.
Recipe Ingredients :
* Pumpkin (peeled and cut to pieces) – 500g
* Cooking Oil – 3 tbsp
* Onion (chopped) – 1
* Tomatoes (cut to small pieces) – 2
* Green Chillies (cut to small pieces) – 2
* Ginger Garlic Paste – 1 tbsp
* Red Chilli Powder – 1 tsp
* Turmeric Powder – 1 / 2 tsp
* Coriander Powder – 1 tsp
* Cumin Seeds – 1 tsp
* Mustard Seeds - 1 / 2 tsp
* Curry Leaves – 4 to 5
* Sugar – 1 tsp
* Salt to taste
Preparation :
Take a wok(kadai) and heat oil in it. Once it is hot add mustard seeds, and as they start sputtering add cumin seeds, ginger garlic paste, curry leaves. Fry these ingredients till they turn brown. Then add onions and fry till onions are soft and turn little golden.
Add tomatoes, pumpkin, red chilli powder, green chillies, turmeric powder and salt and cook for 10 minutes more covering the wok with a lid. At this point pumpkin will become little soft. Then add Sugar, coriander powder and 1 cup water. Mix well and cook on medium flame for 10 minutes more after covering the wok with a lid. Stir in between and once pumpkin is very soft your dish is ready.
Garnish with Coriander Leaves and serve with Methi Parathas.
