Potato Curry

Potato Curry is the favorite of most Indian ladies as it is easy and fast to make. All you need is ready boiled potatoes and traditional Indian spices to make this potato veg curry.



Recipe Ingredients :

Boiled Potatoes (cut to pieces) – 3
Vegetable Oil – For Frying (2 tbsps)
Onion (chopped) - 1
Tomatoes (chopped) – 2
Ginger Garlic Paste – 1 tsp
Turmeric Powder – 1/ 2 tsp
Red Chilli Powder – 1 / 2 tsp
Garam Masala – 1 / 2 tsp
Cumin Seeds – 1/ 2 tsp
Coriander Powder – 1 / 2 tsp
Coriander Leaves (chopped) – For garnishing
Hing (Asafoestida) – A pinch
Green Chillies (chopped) – 2
Amchur (Mango Powder ) – 1 / 2 tsp
Salt to taste



Preparation:

Heat oil in a open pressure cooker. Once it is hot add cumin seeds, onions and ginger garlic paste. Saute till onions turn little brown. Add potatoes, tomatoes, salt and all other spices ingredients. Add 2 cups of water and pressure cook the sabji for one whistle.

Open the cooker lid once pressure has reduced and steam has come out naturally. Garnish with coriander leaves and serve with chapattis.

You can add some yogurt also to bring a different taste to this curry.
