Poricha Koottu

Poricha Koottu - Curry made with a mixture of Vegetables and Moong Dal. You can serve it along with Rice or Roti.



Recipe Ingredients

* Moong Dal (Split Green Gram)- 1/4 cup

* Refined Oil - 1/2 tsp

* Potatoes, Drumsticks, Snake Gourd, Aubergines, chopped - 3 cups

* Dry Red Chillies - 2

* Cumin Seeds - 1/4 tsp

* Coconut, grated - 1 1/2 tbsp

* Urad Dal (Split Black Gram) - 1/4 tsp

* Mustard Seeds - 1/4 tsp

* Curry Leaves - 4

* Asafoetida (hing) - A Pinch

* Salt to taste



Preparation

First pressure cook the split green gram and keep aside.

Boil chopped potaotes, drumsticks, aubergines and snake gourd in 1 cup of salted water till they become tender. Remove and drain.

Grind together the dry red chillies, cumin seeds and coconut vegetables. Stir and mix well.

Take a kadai (wok) and heat oil in it . Once it is hot add mustard seeds, split black gram, hing and curry leaves. As seeds start spluttering add to the green gram mixture. Stir and mix well all the ingredients and remove from heat.

Serve hot with Basmati Rice.
