Patrel

Patrel - Parsi snack recipe of Colocasia leaves. It sounds difficult to make but can be made ready in half an hour. You can serve this as a snack or starter.



Recipe Ingredients

* Colocasia leaves (arvi ka saag) - 25
* Besan (Gram flour) - 1/2 cup
* Wheat flour - 1/2 cup
* Rice flour - 1/2 cup
* Vegetable Oil - 6 tbsp

For the filling

* Green Chillies - 4
* Dry Red Chillies - 5
* Ginger Garlic Paste - 1 tsp
* Cumin Seeds (roasted) - 1 tsp
* Coriander Seeds (roasted) - 1 tsp
* Cloves - 5
* Cinnamon (1" stick) - 1
* Turmeric Powder - 1/2 tsp
* Bananas (mashed) - 2
* Green coriander (chopped) - 2 tbsp
* Tamarind (imli) water - 1 cup
* Jaggery (gur) - 2 tbsp
* Salt to taste



Preparation

First grind all the filling ingredients together to make a thick paste, adding a little water if required.

Take a plate and place an inverted colocasia leaf flat, spread the paste thinly over it, place another leaf on top and apply the paste again. Cotinue this process for 5 to 6 leaves if they are large or 9 to 10 leaves if they are small. Tuck in the sides and roll tightly, secure with a string. Similarly, make more such rolls.

Heat oil in kadai(wok) and once it is hot, fry the rolls on all sides, then cover the pan with a lid containing some water. Lower heat, stirring occasionally for 45 minutes to 1 hour. Remove and keep aside to cool.

These can be refrigerated for a week or so and eaten when desired. To serve, cut the rolls into slices and shallow fry. Serve with lemon wedges.
