Patra

Gujarati Patra is a delicious snack made with arbi(colocasia) leaves. This is a traditional Gujarati dish which can be made ready in 20 to 25 minutes.



Recipe Ingredients

* Gram Flour - 1 & 1/2 cup
* Whole Wheat Flour - 1 cup
* Cooking Oil - 4 tbsp
* Soyabean Oil - 4tbsp
* Turmeric Powder - 1 tsp
* Cumin Seeds - 1 tsp
* Asafoetida - a pinch
* Coconut (grated) - 3tbsp
* Green Coriander (chopped) - 5 tbsp
* Sugar - 5 tsp
* Yogurt - 1 cup
* Green Chilli (cut) - 3
* Ginger (paste) - 1 tbsp
* Colocasia Leaves (Arbi)(cut to 4 pieces) - 8
* Salt to taste



Preparation

First cut Green Chillis finely and mix it with ginger garlic paste.

Mix gram flour, whole wheat flour, turmeric powder, yogurt, green chilli ginger paste, soyabean oil, salt, sugar and green coriander till a smooth paste is formed.

Spread this paste over one piece of a colocasia leaf and roll into a tight cylinder. Secure with a string. Similarly, prepare the others. (You can make two or three spreads also)

Steam the rolls for 5 minutes. Remove and cut each roll into slices. Take a pan and heat cooking oil in it. Once it is hot add sesame seeds, cumin seeds, asafoetida, coconut (grated), remaining coriander and sauté for few minutes on medium flame. Add paatra slices and stir fry till well mixed.

Garnish with green coriander and grated coconut.
