First make the small puris by mixing together maida, wheat flour, red chilli powder, turmeric powder, salt, asafoetida, oil, cumin and ajwain.
Add water and knead to a hard dough. Roll out small puris (3 cms in diameter) with the dough., prick with a fork. deep fry and keep aside.
For the curd mix, beat the curd and add sugar and salt to it. Season it with mustard and cumin. Mix thoroughly. To serve crush the puris a little and place in the serving plate. Mix salt with the potatoes and layer over the puris. Pour 3 tbsp of curd mix over this, then 1 tsp of mint chutney followed by 1 tsp of tamarind chutney and serve.
