Papaya Chutney - This chutney is most popular in Bengali Cuisine. However you can prepare it yourself in 15 minutes by using below recipe.
* Raw Papaya (diced) - 300g
* Cooking Oil - 4 tsp
* Panch Phoran - 1 tsp
* Sugar - 1/2 cup
* Raisins - 2 tbsp
* Lemon Juice - 1/4 cup
* Water - 1/4 cup
Panch Phoran Preparation
Mix equal quantities of fenugreek seeds (methi dana), cumin seeds(jeera), fennel seeds(saunf),mustard seeds (sarson) and onion seeds(kalonji). Store in any airtight jar and use as and when required.
Take a kadai(wok) and heat oil in it. Once it is hot add Panch Phoran and sauté for a few seconds.
Add the raw papaya and sauté for 5 minutes. Add Sugar, water and raisins and cook till the papaya is done and the water is nearly dried.
Pour in the lemon juice, mix well and remove from the flame.
