Paneer Pulao

Paneer Pulao A traditional Indian Rice recipe made with home made Paneer(cottage cheese) and vegetable stock. You can make it ready in 45 minutes and serve as a main dish.



Recipe Ingredients

* Basmati Rice - 350g
* Paneer (cottage cheese) - 80g
* Cornflour - 2 tsp
* Oil - For frying
* Milk - 4 tbsp
* Onions (sliced) - 3 tbsp
* Cinnamon Powder - 2 tsp
* Green Cardamoms - 4
* Black Cardamoms - 2
* Bayleaves - 3
* Cloves - 4
* Ginger Garlic Paste - 2 tbsp
* Vegetable Stock - 3 cups
* Butter - 1/2 cup
* Lemon - 1/2
* Red Chilli Powder - 1/2 tsp
* Salt to taste



Preparation

First wash and soak rice in sufficient water for half and hour. Drain and keep aside.

Mash the cottage cheese. Add salt, red chilli powder and cornflour. Mix well and make small balls of the mixture. Heat oil in a pan and deep fry the cottage cheese balls to a light golden brown colour. Remove and keep aside.

Take a heavy bottomed pan and heat oil in it. Once it is hot, add the whole spices and sauté till they crackle. Add sliced onions and stir fry to a golden brown colour. Add ginger garlic paste dissolved in water.

Stir vegetable stock and bring to a boil. Add salt, butter and juice of half a lemon. Add the rice and cook on medium heat, stirring occasionally. When the water is reduced to the level of the rice, sprinkle milk on top. Cover with a wet cloth and cook on low heat for 15 minutes or until the rice is cooked fully.

Remove from heat and serve hot after garnishing with fried cottage cheese balls.
