Palappam

Palappam - Kerala Dish of pancake made with fine rice flour. This Dosa type of dish is served for breakfast and also during some special occasions. The batter is usually fermented with Toddy (a fermented sap extracted from teh long flower buds of coconut palms).



Recipe Ingredients

* Fine Rice Flour - 1 cup

* Semolina - 1 tbsp

* Sesame Oil - 2 tsp

* Dry Yeast (or Toddy 1/4 cup) - 1/4 tsp

* Coconut Milk - 1 cup

* Sugar - 2 tbsp

* Salt - 1/2 tsp

* Water - 1/2 cup



Preparation

First prepare porridge with semolina and water by mixing and cooking properly on medium heat. Once cooked keep aside and let it cool.

Add remaining ingredients other than salt to it. Mix lightly. Keep aside to let it ferment for 5 hours. After fermentation the quantity will almost double. Add salt and mix well.

Heat a pan and brush slightly with sesame oil. Ladle the batter into the center. Twirl the pan just once to spread the batter so as to form a lace. Cover and cook for a couple of minutes. Take care not to overheat the pan. Ensure not to break the crisp lace around the spread when removing it from the pan.

This dish can be served with either a vegetable or meat stew.
