Palak Paratha

Palak Paratha - Special Paratha Recipe which you can enjoy with Yogurt, Jaggery and Pickle. In India it is mostly prepared during winters. To make the dish tasty try to use fresh and juicy palak leaves.



Recipe Ingredients

* Palak Leaves (spinach) - 200g

* Wheat Flour - 3 to 4 cups

* Desi Ghee (Clarified Butter) - 4 to 5 tbsp

* Green Chillies (cut finely)- 3

* Salt as per taste


Preparation

First wash and thoroughly clean the leaves. Then blanch them all and refresh in normal water.

Now using a mixer grinder make a puree of palak and green chillies. In a bowl mix together wheat flour, salt, 1 tsp of ghee and palak puree. Add sufficient water and knead to make a soft dough.

Divide the dough into equal size balls. Roll out each ball on a flat surface and make a thin roti. Spread little flour and ghee and fold from the centre. Fold it again from one side to form a cone shape roti. Finally roll it one more time and keep it aside.

Heat a griddle(tawa) and apply very little ghee on top. Once it is fully hot gently put the paratha. Apply ghee on top side with a spoon. Lower the flame and let the bottom side cooks a little. Turn over and cook the other side. Apply ghee on top side again. Keep turning over the paratha on the tawa till it is crisp and golden brown.

Serve hot along with Yogurt and Lime Pickle.
