Paal Poli

Paal Poli - South Indian Sweet Rotis made with Milk and Rava.

Recipe Ingredients

* Rava - 1 cup

* Milk - 1 litre

* Sugar - 1 cup

* Desi Ghee (Clarified Butter) - 1 tbsp

* Refined Oil - For deep frying

* Cardamom Powder - 1/2 tsp

* Saffron - A Pinch

* Cashew Nuts (powdered) - 1 tsp

* Almonds (powdered) - 1 tsp

Preparation

First mix together rava and desi ghee. Knead well to make a smooth dough. Keep it aside for 30 minutes.

After half hour knead the dough again to make it pliable and smooth and keep covered in a wet cloth for 2 to 3 hours. Divide and roll out thin rotis from the dough.

Heat oil in a kadai and deep fry the pooris. Meanwhile boil milk till it is reduced to three fourths its original volume. Add sugar, saffron, cardamom, cashew nuts and boil for 2 minutes.

Dip the boiling Pooris in the boiling milk and remove immediately with a ladle. Fold and arrange on a plate side by side. Decorate with a little saffron on top.
