Paal Payasam - South Indian Kheer made in traditional style with rice and cashew nuts.
Recipe Ingredients
* Rice - 1/2 cup
* Milk - 5 cups
* Sugar - 3/4 cup
* Desi Ghee (Clarified Butter) - 2 tsp
* Cashew Nuts - 10
* Green Cardamom, crushed - 3
* Raisins - A few
Preparation
First dry roast rice in a hot kadai(wok) and pressure cook in 2 cups of milk and water.
In a separate kadai, boil the rest of the milk till it is reduced to three-fourths of its original quantity. Mash and add the cooked rice in this and boil together for a few minutes, stirring frequently till it is mixed well.
Add sugar and boil till it dissolves completely. Add cardamom powder, fried cashew nuts and raisins. Put in refrigerator and serve chilled.
