Overnight Layered Salad Vegetarian layered Salad made with toamatoes, beetroot, cabbage, carrot and lettuce leaves. Serve chilled and crisp to enjot the salad most.
Recipe Ingredients
* Cucumber (grated) - 1 large
* Carrot (grated) - 1 large
* Onion (finely chopped) - 1 large
* Spring Onion (chopped) - 1 bunch
* Green Cabbage - 1 small
* Lettuce Leaves - 1 bunch
* Tomato (chopped finely) - 1 large
* Beetroot - 1 small
* Lemon Juice - 1 tbsp
* Pepper to taste
* Sugar to taste
* Salt to taste
Preparation
Steam beetroot in a pressure cooker. Peel and slice into thin rounds.
Chill all the ingredients till crisp. Rinse a transparent glass bowl with cold water. Stick the beetroot slices around the inner wall of the bowl evenly. Spread the tomatoes at the bottom of the bowl.Sprinklw salt and pepper.
Spread the spring onions over the tomatoes. Repeat for each vegetable in the following order: cabbage, lettuce leaves, onion and carrot. Sprinkle lemon juice. Chill in a refrigerator overnight and then serve.
