Nimki

Nimki - Bengali Mathri made from maida (refined flour). A very easy snack item which you can make in 10 to 15 minutes and can take it on picnics or when travelling.



Recipe Ingredients

* Refined Flour (Maida) - 250g

* Desi Ghee (Clarified Butter) - 2 tbsp

* Cooking Oil - For Frying

* Onion Seeds (Kalonji) - 4 tsp

* Salt - 2 tsp

* Water - 4 tbsp

Preparation

Take a bowl and mix together refined flour, desi ghee and salt. Add onion seeds and water. Mix and knead to form a firm dough.

Divide the dough into small equal size balls.

Flatten the balls and roll them out into discs. Dust flour on both sides of the discs and then fold each into quarters. These will be triangular in shape.

Take a Kadai (wok) and heat oil in it. Once it is hot fry the quarters over a medium flame till crisp and golden in colour. Drain the excess oil.

Let them cool down and then store in an airtight container. These Mathris you can enjoy for 2 to 3 weeks.
