Mughlai Paratha

Mughlai Paratha - This special Paratha become famous from the by lanes of Paranthe Wali Gali in Old Delhi. Normally it is smeared with beaten eggs but you can make a stuff paratha also by stuffing Aloo, Gobi etc.



Recipe Ingredients

* Wheat Flour - 1 1/2 cup

* Maida - 1 cup

* Eggs (beaten)- 3

* Cooking Oil - For Frying

* Baking Powder - 1 tsp

* Salt to taste



Preparation

In a medium size bowl first mix wheat flour, maida, baking powder and salt. After mixing these ingredients add 2 to 3 tbsp of oil and using sufficient amount of water make a smooth pliable dough. Cover it with a damp cloth and keep it aside for 1 to 2 hours.

After 2 hours Divide the dough into equal size dough balls. Take each ball and roll out into flat thick big size rotis. Smear some oil on top and apply very little flour also.

Fold the spread roti into a half circle and again from two sides to form a squarish shape roti. Apply beaten eggs on the surface and fold the four corners of roti toward the center. Gently put this folded roti into a preheated boiling oil(in a kadai).

Cook in the oil till it turns golden and crisp. If required put the gas on medium flame and keep turning the paratha frequently so that cooking is proper.

Take it out from the Kadai(wok) and put on a tissue paper. After a while serve hot along with chutney and yogurt.
