Mixed Vegetable Curry

Mixed Vegetable Curry is a tasty Curry dish which can be easily made in 20 to 25 minutes. You can use any combination of mixed vegetables like carrot, turnip, peas, french beans, baby corn etc to make this dish.



Recipe Ingredients :

* Carrots - 2
* Potatoes - 2
* Turnip - 2
* Peas - 1/4 cup
* Onions (finely cut) - 1
* Tomato Puree - 2 to 3 tbsp
* Cooking Oil - 3 tbsp
* Fenugreek Seeds - 1/2 tsp
* Ginger Garlic Paste - 1 tsp
* Turmeric Powder - 1 tsp
* Red Chilli Powder - 1 tsp
* Green Chillies - 1 tsp
* Coriander Powder - 1 tsp
* Garam Masala Powder - 1/2 tsp
* Coriander Leaves - One bunch
* Salt to taste
* Water - 1 cup



Preparation :

First wash, peel and cut all the vegetables into small pieces. Take oil in a pan and heat it. Once it is hot, add fenugreek seeds. As they start sputtering add onions and Sauté till they turn little brown.

At that moment add all the vegetables and fry till they turn little brown. Then add salt and all spices. Add water, cover the pan with a lid and cook on medium flame till vegetables are done and gravy is formed. This will take 10 minutes or so.

Garnish with coriander leaves and serve hot with Chapatis.
