Mishti Doi - A Bengali Sweet very easy to make however it takes little longer to be fully made. Use a clean handi (earthen pot) to store it as the aroma of handi brings it a natural taste.
* Milk - 1 Liter
* Yogurt - 35g
* Sugar - 250g
* Handi (earthen pot) - one
Take a big bowl and boil milk in it. Keep boiling it till it reduces to half or little less than half the original quantity.
In a separate pan melt sugar with 50ml of water. Ensure sugar is dissolved properly in water.
Slowly add this sugar syrup to boiled milk and then boil again for 10 minutes more. After 10 minutes take off from flame and let it cool down a bit. Then add yogurt and mix properly. Pour the entire content in the handi and cover the handi with a muslin cloth. Let the doi settle for 8 to 10 hours then refrigerate.
