Methi Dhebra

Methi Dhebra is a thick Gujarati Chapati made with a mix of methi leaves and wholewheat flour and millet flour. In Gujarat this delicacy is enjoyed even with tea also.

Recipe Ingredients

* Fenugreek Leaves (Methi) - 2 cups
* Cooking Oil - For Frying
* Wholewheat flour - 1/2 cup
* Bajre Ka Atta (Millet Flour) - 1 cup
* Gram Flour (Besan) - 1 tbsp
* Suji (semolina) - 1 tsp
* Yogurt - 1/2 cup
* Garlic (chopped) - 1 tbsp
* Green Chillies (Chopped) - 2
* Sugar - 1 tsp
* Asafoetida (hing) - 1/4 tsp
* Red Chilli Powder - 1/2 tsp
* Salt to taste

Preparation

First chop methi leaves finely and mix all the ingredients together except cooking oil. Make a soft dough using sufficient water and 2 to 3 tbsp of oil.

Divide the dough equally into small balls. Roll each ball out into a 3" disc. Heat a tawa (griddle) on high flame. Lower the flame and lay flat dough disc on the tawa.

Cook on both sides till small bubbles appear on both sides. Increase the flame to medium and sprinkle 1/2 tbsp of oil around the disc and very little on top surface of the disc. Fry till small brown spots appear on both the sides. Remove from the tawa and put cooked dhebra on a plate.

Similarly cook other disc also. Serve along with Coriander Chutney and Pickle.
