Masala Dosa


Masala Dosa - This Dosa is made with little potato filling in between the folds. Make it at your home with below simple recipe.

Recipe Ingredients

* Parboiled Rice - 2 cups
* Cooking Oil - As per Requirement
* Rice - 1/2 cup
* Rava (Semolina) - 2 tsp
* Urad Dal - 1/2 cup
* Salt to taste

For Filling
* Potato (boiled, peeled & mashed) - 4
* Onions (chopped) - 2
* Turmeric Powder - 1 tsp
* Red Chilli Powder - 1 tsp
* Green Chillies (chopped) - 3
* Mustard Seeds - 1/2 tsp
* Curry leaves - 4
* Urad Dal - 1/2 tsp
* Salt to taste



Preparation

First prepare the filling by heating 1 tsp oil in a kadai(wok). When it is hot, fry mustard seeds, urad dal and curry leaves. As seeds start sputtering add green chillies and onions and shallow fry till onions start turning little brown.

Add potatoes, red chilli powder, turmeric powder and salt with little water to the kadai. Boil all the ingredients together till the mixture takes a thick consistency.

Now make the Dosa - Wash and soak all ingredients (except oil) for 4 hours and grind together well to a soft batter. Allow to ferment for a minimum of 8 hours. Add water, if required to the batter. You can keep this batter in the refrigerator also for a day or so.

At the time of making the Dosa, heat a tawa (griddle) and spread the batter on the tawa. Add little oil around the edges and on top of dosa. Then spread a little filling on the dosa and when the bottom becomes crisp fold it into a semicircle.

Serve hot with Sambar and Coconut Chutney.
