Mangodi Pulao

Mangodi Pulao - Fried Rice with green gram dumplings. You can use mangodis made from green gram (moong) or moth beans (moth dal) paste. Now a days these are readily available from market.



Recipe Ingredients

* Basmati Rice - 3 cups
* Mangodi - 1 cup
* Cooking Oil - 1 cup
* Bayleaves (Tej Patta) - 2
* Cumin Seeds - 1/2 tsp
* Onion (sliced & browned) - 1
* Cinnamon sticks 1/2" - 2
* Cloves - 5
* Green Cardamoms (choti elaichi) - 5
* Black Cardamoms (badi elaichi) - 2
* Salt to taste
* Water - 6 to 7 cups



Preparation

First soak the rice for 15 minutes.

After 15 minutes heat 2 tbsp of oil in a kadai(wok). Shallow fry the mangodis on medium flame for 2 to 3 minutes. Drain the excess oil and keep aside.

Heat the remaining oil in a pan. Add the green cardamoms, black cardamoms, cloves, cinnamon sticks, bay leaves and cumin seeds. Sauté over a medium flame till the seeds crackle.

Add the rice (drained) and mangodis. Stir gently, add the salt and water. bring to a boil and then lower the flame. Cook until the liquid dries, stirring only occasionally, very gently.

Garnish with browned onion slices and serve.
